Chicken Fajitas
Classic chicken fajitas with two seasoning variations — a simpler Downshiftology blend and a bolder Allrecipes blend with cornstarch for better cling.

Combine all ingredients for your chosen seasoning blend in a small bowl and mix well.

Toss sliced chicken with the seasoning until evenly coated.

Heat olive oil in a large cast-iron skillet or frying pan over medium-high heat.

Cook chicken strips for 5–7 minutes, turning once, until cooked through and slightly charred. Remove and set aside.

In the same pan, sauté the peppers and onion for 5–6 minutes until softened and caramelised at the edges.

Return chicken to the pan, toss everything together, and cook for 1–2 minutes more.

Serve immediately in warm tortillas with desired toppings (sour cream, guacamole, salsa, shredded cheese, lime).

Notes
- The Downshiftology blend is mild and clean — good for kids or spice-sensitive palates.
- The Allrecipes blend uses cornstarch, which helps the seasoning cling to the meat and creates a slight sauce in the pan. Adds noticeable heat from cayenne.
