Sweet cheese and semolina dessert rolled with ashta

Instructions

    Prep your attar and ashta (see recipes before)

    Prep your cutting board by covering in parchment paper, then covering in attar, also rub your rolling pin in attar

    Have some boiled water on standby

    Shred 2 fresh mozzarella balls (the ones in water, Costco sells them) very well

    Add 1 cup of water to a big pot and 2 tbsp of sugar

    Add in the cheese, let it combine into a ball

    Add in 1.5 cups of fine semolina in gradually and mix into the cheese, if you pour the semolina in just one go, it will clump and you will probably cry

    Mix like your life depends on it, use a strong spoon. If mixing fails, fold it in

    If it starts to dry out before you have incorporated all the semolina, add a tbsp of water in at a time

    Make sure it all is stuck together, then add a tbsp or two of attar to form a ball

    Transfer to a cutting board or table that is covered in parchment paper (or aluminum worst case)

    Quickly flatten using a rolling pin, aiming to get a square (which never works but alas, try)

    Add ashta (see recipe), roll like sushi and slice

Notes

  • If you pour semolina in all at once, it will clump
  • Work quickly as the mixture sets fast
