Shaabiyat & Ashta
Crispy phyllo pastries filled with sweet cream (ashta)
Instructions

Make attar (see recipe)

Take 3 cups of whipping cream (35%) and one cup of milk or 10% cream, and mix with a ½ cup of sugar, drops of vanilla, a few drops of orange blossom water, and ½ cup of corn starch on cold

Turn the heat on medium and keep mixing until it thickens then transfer to glass tray, and into the fridge to cool

Take 10-14 sheets of phyllo dough, butter every second sheet, cut into squares, fold into triangles and put into the oven at 375°F

Wait until triangles are golden brown, remove from oven while hot

Fill the pastry with ashta

Cover with cold attar and pistachio sprinkle after (attar makes it sticky so pistachio stays on)
