Roast Chicken

Preheat oven to 500°F. Let the chicken sit at room temperature for about 30 minutes before roasting.

In a large bowl, toss the potatoes with olive oil, salt, pepper, and thyme. Place in the bottom of a cast iron Dutch oven or lined metal tray.

Combine butter mix ingredients. Rub generously over the chicken, stuffing some under the skin. Insert the lemon halves inside the cavity.

Place chicken on top of the potatoes. Add thyme sprigs underneath if using. Tie legs together and tuck wings. Leave uncovered throughout cooking.

Roast at 500°F for 20 minutes.

Without opening the oven, reduce to 350°F and continue roasting 30–40 minutes, until a thermometer reads 165°F between thigh and breast.

Remove from oven and rest at least 10 minutes before carving.

## Ingredients
- 1 whole chicken, giblets removed and patted dry
- Butter mix:
- 1/2 c tablespoons butter, melted
- Drizzle olive oil
- 1 head of garlic, peeled and grated
- 2 sprigs fresh or crushed dry thyme
- Zest of lemon
- 6-8 potatoes, quartered
- 3 tbsp olive oil
- Salt & Pepper
- 1 lemon, halved
- 2 Sprigs fresh thyme (optional)
## Steps
- Preheat oven to 500° F. Let the chicken sit on the counter and come to room temperature for about 30 minutes before roasting.
- In a large bowl, toss together the potatoes, 3 tablespoons of olive oil, and salt and pepper, thyme, to taste.
- Place potatoes in the bottom of a cast iron Dutch oven or lined metal tray.
- Prepare the butter mix.
- Add butter mix to chicken, being sure to stuff under the skin and brush the top. Insert remaining lemon halves inside chicken.
- Place the chicken on top of the potatoes and thyme sprigs (optional) in the Dutch oven. Tie the legs of the chicken together and tuck the wings underneath. Leave the chicken uncovered the entire cooking process.
- Roast chicken at 500° F for 20 minutes.
- Without opening the oven, reduce the temperature to 350° F and continue roasting for 30-40 more minutes, or until a meat thermometer reads 165° F when inserted between the thigh and breast.
- Remove the chicken from the oven. Allow to rest for at least 10 minutes before carving and serving.
