    Preheat oven to 500°F. Let the chicken sit at room temperature for about 30 minutes before roasting.

    In a large bowl, toss the potatoes with olive oil, salt, pepper, and thyme. Place in the bottom of a cast iron Dutch oven or lined metal tray.

    Combine butter mix ingredients. Rub generously over the chicken, stuffing some under the skin. Insert the lemon halves inside the cavity.

    Place chicken on top of the potatoes. Add thyme sprigs underneath if using. Tie legs together and tuck wings. Leave uncovered throughout cooking.

    Roast at 500°F for 20 minutes.

    Without opening the oven, reduce to 350°F and continue roasting 30–40 minutes, until a thermometer reads 165°F between thigh and breast.

    Remove from oven and rest at least 10 minutes before carving.
